
Hearty, southwestern-spiced
black bean salad with corn, green pepper and red onion, seasoned
with fresh cilantro, lime juice, garlic, cumin and a sizable
pinch of ground red pepper.

Bean Salad
- 2 (15-ounce) cans black
beans, drained, rinsed
1 (11-ounce) can whole kernel corn, drained
1/2 cup mayonnaise or salad dressing
1/2 cup green pepper strips
1/2 cup red onion, sliced
2 tablespoons fresh cilantro (or parsley), chopped
2 tablespoons lime juice
1 clove garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon salt (optional)
1/4 teaspoon ground red pepper
- Mix all ingredients in
large bowl. Refrigerate several hours or overnight.
Makes 8 servings.
