Blue Cheese and Spinach Salad

No recipe image available.A tasty salad mixture of fresh spinach, iceberg lettuce, sliced mushrooms, red onion rings and diced tomatoes tossed in a creamy, homemade blue cheese dressing.

Recipe Ingredients:

Dressing:
1 (8-ounce) carton plain yogurt
1/4 cup (1 ounce) crumbled Wisconsin Blue Cheese
1 teaspoon granulated sugar
1/2 teaspoon salt
1/2 teaspoon celery seed
1/4 teaspoon dried basil leaves

Salad:
4 cups torn iceberg lettuce
2 cups fresh torn spinach
1 cup sliced fresh mushrooms
1 cup red onion rings
1 medium tomato, diced

Cooking Directions:

  1. For Dressing: Combine yogurt, blue cheese, sugar, salt, celery seed and basil. Cover and chill.
  2. For Salad: Combine salad ingredients; cover and chill.
  3. Just before serving, pour dressing over greens and toss lightly.

Makes 4 servings.
