A tasty salad mixture of
fresh spinach, iceberg lettuce, sliced mushrooms, red onion rings
and diced tomato tossed in a creamy, homemade blue cheese dressing.
Blue
Cheese and Spinach Salad
- Dressing:
1 (8-ounce) carton plain yogurt
1/4 cup (1 ounce) crumbled Wisconsin Blue Cheese
1 teaspoon granulated sugar
1/2 teaspoon salt
1/2 teaspoon celery seed
1/4 teaspoon dried basil leaves

- Salad:
4 cups torn iceberg lettuce
2 cups fresh torn spinach
1 cup sliced fresh mushrooms
1 cup red onion rings
1 medium tomato, diced
- For Dressing: Combine
yogurt, blue cheese, sugar, salt, celery seed and basil. Cover
and chill.
- For Salad: Combine salad
ingredients; cover and chill.
- Just before serving, pour
dressing over greens and toss lightly.
Makes 4 servings.
