A flavorful salad mixture of fresh spinach, sliced mushrooms, cherry tomatoes and slice hard-cooked eggs tossed in a creamy, homemade blue cheese dressing.

Blue Cheese Spinach Salad

1/2 cup sour cream
1 1/2 ounces cream cheese, softened
2 tablespoons Wisconsin Blue cheese, crumbled
1 tablespoon dry sherry
1/8 teaspoon onion powder
1/8 teaspoon paprika
1/8 teaspoon salt
6 cups torn fresh spinach
1 1/2 cups sliced fresh mushrooms
1 1/2 cups cherry tomatoes, halved
3 eggs, hard-cooked and sliced
  1. For Dressing: In a blender container or food processor bowl combine sour cream, cream cheese, blue cheese, sherry, onion powder, paprika, and salt. Cover and blend or process until smooth. Cover and chill about 2 hours.
  2. For Salad: In a large salad bowl combine spinach, mushrooms, tomatoes, and eggs. Cover and chill about 2 hours.
  3. To serve, toss dressing with the spinach mixture.

Makes 8 servings.
