Broccoli Salad

8 bacon strips, cooked and crumbled
2 bunches broccoli, chopped, cooked crisp-tender, drained
1 1/2 cups shredded Cheddar cheese
1 medium red onion, chopped
1/4 cup red wine vinegar
1/8 cup white sugar
3/4 cup mayonnaise
1 tablespoon fresh lemon juice
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
  1. In a large bowl, combine cooled broccoli, cheese, bacon and onion.
  2. Prepare the dressing by whisking together vinegar, sugar, mayonnaise, lemon juice, salt and pepper.
  3. Pour dressing over broccoli mixture and toss to combine. Cover and refrigerate until ready to serve.

Makes 12 servings.
