Fresh broccoli salad with
bits of crisp smoked bacon, red onion and shredded cheddar cheese
tossed in a creamy, sweet and tangy dressing.
Broccoli
Salad
- 8 slices smoked bacon,
cooked and crumbled
- 2 bunches broccoli, chopped,
cooked crisp-tender and drained
- 1 1/2 cups shredded cheddar
cheese
- 1 medium red onion, chopped
- 1/4 cup red wine vinegar
- 1/8 cup granulated sugar
- 3/4 cup mayonnaise
- 1 tablespoon fresh lemon
juice
- 1 teaspoon salt
- 1/2 teaspoon freshly ground
black pepper
- In a large bowl, combine
cooled broccoli, cheese, bacon and onion.
- Prepare the dressing by
whisking together vinegar, sugar, mayonnaise, lemon juice, salt and pepper.
- Pour dressing over broccoli
mixture and toss to
combine. Cover and refrigerate until ready to serve.
Makes 12 servings.
