Caesar Tortellini Salad with Chickpeas

No recipe image available.A fast and easy vegetarian entrée salad of cheese tortellini and chickpeas tossed with Caesar dressing and garnished with toasted pine nuts.

Recipe Ingredients:

1 (9-ounce) package refrigerated cheese tortellini
1 (15-ounce) can chickpeas, drained
1 cup carrots, julienned
1 cup celery, finely sliced
1 cup red peppers, finely sliced
1/4 cup pine nuts, toasted
1/3 cup chopped fresh parsley
1 bottle your favorite Caesar dressing*

Cooking Directions:

  1. Cook tortellini according to package directions, drain and cool in strainer under cold running water. Set aside to drain.
  2. In a large serving bowl, combine remaining ingredients with one bottle of your favorite Caesar dressing.
  3. Add tortellini, toss and serve.

Makes 4 servings.

*Be aware that some commercial Caesar dressings contain anchovy paste.
