A fast and easy vegetarian
entree salad of cheese tortellini and chickpeas tossed with Caesar
dressing and garnished with toasted pine nuts.
Caesar
Tortellini Salad with Chickpeas
- 1 (9-ounce) package refrigerated
cheese tortellini
1 (15-ounce) can chickpeas, drained
1 cup carrots, julienned
1 cup celery, finely sliced
1 cup red peppers, finely sliced
1/4 cup pine nuts, toasted
1/3 cup chopped fresh parsley
1 bottle your favorite Caesar dressing*
- Cook tortellini according
to package directions, drain and cool in strainer under cold
running water. Set aside to drain.
- In a large serving bowl,
combine remaining ingredients with one bottle of your favorite
Caesar dressing.
- Add tortellini, toss and
serve.
Makes 4 servings.
*Be aware that some commercial
Caesar dressings contain anchovy paste.
