California Toss Salad

California Toss SaladBursting with bright color, contrasting texture and complimentary flavors, this heart-healthy salad is sure to become a family favorite.

Recipe Ingredients:

Salad:
1 (15-ounce) can DEL MONTE® Lite Yellow Cling Sliced Peaches, drained
1 cup enoki or sliced fresh mushrooms
1 cup cherry tomatoes, halved
6 cups assorted salad greens
1/4 cup green onions, sliced

Tarragon Dressing:
Liquid from peaches
1/4 cup white wine vinegar
1 tablespoon Dijon mustard
1/2 clove garlic, creshed
1/2 teaspoon basil, crumbled
1/4 teaspoon tarragon
1/4 teaspoon ground black pepper

Cooking Directions:

  1. Drain peaches, reserving liquid.
  2. For Tarragon Dressing: Thoroughly blend all ingredients.
  3. Arrange peaches, mushrooms, tomatoes, salad greens and green onions in salad bowl. Toss with Tarragon Dressing.

Makes 6 to 8 servings.
