A tangy homemade Caesar dressing brings out the best in both the chicken and the romaine.

Chicken Caesar Salad

1/4 cup freshly grated Parmesan or Romano cheese
1/4 cup mayonnaise
1 tablespoon water
1 tablespoon lemon juice
1/2 teaspoon minced garlic
1/2 teaspoon Worcestershire sauce
1/8 teaspoon ground black pepper
8 cups chopped romaine lettuce
12 ounces cooked chicken, cut into bite-size strips (about 2 1/4 cups)
1 cup croutons (optional)
Freshly grated Parmesan cheese for garnish (optional)
  1. Combine cheese, mayonnaise, water, lemon juice, garlic, Worcestershire sauce and pepper in small bow; mix until creamy.
  2. Combine lettuce, chicken and dressing in large serving bowl; toss well to coat. Sprinkle with croutons and Parmesan, if desired. Serve immediately.
