This colorful slaw can use any color bell pepper or cabbage to make a pretty side dish for your dinner. Try it with Grilled Apricot-Pineapple Pork Ribs or Barbecue Pork Skillet.
Citrus Slaw
- 1/2 cup mayonnaise
2 tablespoons thawed frozen orange juice concentrate
1 teaspoon sugar
1/4 teaspoon each salt and black pepper
3 cups shredded cabbage (red or green)
1 cup shredded carrot
1/2 of a green bell pepper, thinly sliced
2 tablespoons golden raisins
- Stir together mayonnaise, orange juice concentrate, sugar and salt and black pepper. Stir in shredded cabbage, carrot, green bell pepper, and golden raisins. Mix to coat, cover and keep in refrigerator until ready to serve.
Serves 4 to 5.
