Arrange chicken, melon, cucumber, and zucchini on greens and drizzle with refreshing lime and mint dressing.

Cool-as-a-Cucumber Chicken Salad

2 cups cubed cantaloupe and/or honeydew melon
1 cup finely chopped cucumber
1 cup finely chopped zucchini
1/4 cup thinly sliced green onions
1/3 cup lime juice
2 tablespoons salad oil
2 tablespoons water
2 tablespoons snipped fresh cilantro or mint
1 tablespoon granulated sugar
1/8 teaspoon ground white pepper
4 cups shredded leaf lettuce
2 cups shredded cooked chicken (10 ounces)

  1. In a large bowl, toss together the cantaloupe, cucumber, zucchini, and green onions.
  2. For dressing, in a screw-top jar, combine lime juice, oil, water, cilantro, sugar, and white pepper. Cover and shake well. Drizzle 1/2 cup of the dressing over the melon mixture. Toss lightly to coat.
  3. Divide shredded lettuce among four dinner plates. Top with the melon mixture. Arrange chicken around edges of plates. Drizzle remaining dressing over chicken.

Makes 4 main-dish servings.
