Arrange chicken, melon, cucumber, and zucchini
on greens and drizzle with refreshing lime and mint dressing.
Cool-as-a-Cucumber
Chicken Salad
2 cups cubed cantaloupe and/or honeydew
melon
1 cup finely chopped cucumber
1 cup finely chopped zucchini
1/4 cup thinly sliced green onions
1/3 cup lime juice
2 tablespoons salad oil
2 tablespoons water
2 tablespoons snipped fresh cilantro or mint
1 tablespoon granulated sugar
1/8 teaspoon ground white pepper
4 cups shredded leaf lettuce
2 cups shredded cooked chicken (10 ounces)
- In a large bowl, toss together the cantaloupe,
cucumber, zucchini, and green onions.
- For dressing, in a screw-top jar, combine
lime juice, oil, water, cilantro, sugar, and white pepper. Cover
and shake well. Drizzle 1/2 cup of the dressing over the melon
mixture. Toss lightly to coat.
- Divide shredded lettuce among four dinner
plates. Top with the melon mixture. Arrange chicken around edges
of plates. Drizzle remaining dressing over chicken.
Makes 4 main-dish servings.
