Country Potato Salad.

This potato salad has loads of flavor!

Country Potato Salad

2 pounds potatoes, peeled and cubed
1/2 cup mayonnaise
1 tablespoon apple cider vinegar
1/8 teaspoon ground black pepper
1/2 cup celery, thinly sliced
1/2 cup red onion, chopped
2 eggs, hard cooked, peeled and chopped
1/4 cup sweet relish
Salt and pepper, to taste
  1. Add the potatoes to a 4-quart sauce pot, cover with water, and bring to a boil over high heat. Reduce heat to low and simmer for 10 minutes or until tender.
  2. Drain and cool slightly.
  3. In a large bowl combine the mayonnaise, apple cider vinegar, pepper, celery, onion, eggs, and relish. Fold to blend all the flavors.
  4. Add the cooked potatoes to the bowl and mix all the ingredients together. Season with salt and pepper.
  5. Add a sprinkle of sliced celery and chives and serve.
