Crowd-pleasing indeed! This creamy lemon lime gelatin salad with crushed pineapple and shredded cheddar cheese is surprisingly good.

Crowd Pleasing Lemon Lime Salad

1 (20-ounce) can crushed pineapple
1 (6-ounce) package lime-flavored gelatin
1 (3-ounce) package lemon-flavored gelatin
1 (8-ounce) package cream cheese, softened and cut into small pieces
2 cups (16 ounces) cream-style cottage cheese
2 cups (8 ounces) finely-shredded Wisconsin Cheddar Cheese
1 cup whipping cream, whipped
Salad greens, cucumber slices, radish roses
  1. Drain pineapple, reserving juice. Add enough water to juice to make 4 cups. Heat liquid to boiling. Dissolve gelatin in liquid. Stir in cream cheese. Chill until slightly thickened.
  2. Stir in pineapple, cottage cheese and cheddar cheese. Fold in whipped cream.
  3. Pour into two lightly-oiled 4 cup molds or one 9x13 inch pan. Chill until set.
  4. Garnish salad with salad greens, cucumber slices and radish roses.

Makes 12 to 15 servings.
