Crowd-pleasing indeed!
This creamy lemon lime gelatin salad with crushed pineapple and
shredded cheddar cheese is surprisingly good.

Pleasing Lemon Lime Salad
- 1 (20-ounce) can crushed
pineapple
1 (6-ounce) package lime-flavored gelatin
1 (3-ounce) package lemon-flavored gelatin
1 (8-ounce) package cream cheese, softened and cut into small
pieces
2 cups (16 ounces) cream-style cottage cheese
2 cups (8 ounces) finely-shredded Wisconsin Cheddar Cheese
1 cup whipping cream, whipped
Salad greens, cucumber slices, radish roses
- Drain pineapple, reserving
juice. Add enough water to juice to make 4 cups. Heat liquid
to boiling. Dissolve gelatin in liquid. Stir in cream cheese.
Chill until slightly thickened.
- Stir in pineapple, cottage
cheese and cheddar cheese. Fold in whipped cream.
- Pour into two lightly-oiled
4 cup molds or one 9x13 inch pan. Chill until set.
- Garnish salad with salad
greens, cucumber slices and radish roses.
Makes 12 to 15 servings.
