Wonderful not only with salad greens, but also tossed with cooked pasta or grains.

Fresh Tomato Dressing

2 garlic cloves, finely minced
1 shallot, finely chopped
2 tablespoons red wine vinegar
2 teaspoons balsamic vinegar
5 tablespoons extra virgin olive oil
1/2 cup cherry tomatoes, cut into quarters
1/2 cup chopped fresh basil
Salt and freshly ground pepper to taste
  1. In a bowl, combine the garlic, shallot and both vinegars, mixing well. Set aside for a minimum of 10 minutes to allow flavors to mingle.
  2. Stir in the tomatoes and basil. Season to taste with salt and pepper.

Makes about 1 cup.
