This chicken entrée salad is low in fat, not it taste!

Fruited Chicken and Couscous Salad

1 cup couscous
1 package dried mixed fruit, chopped
1 teaspoon ground cinnamon
1 teaspoon salt
1 (14.5-ounce) can COLLEGE INN® Light and Fat Free Chicken Broth
2 tablespoons olive oil
2 cups cooked chicken, cubed
1/2 cup orange juice
1/2 cup green onions, sliced
1/2 cup celery, sliced
Leaf lettuce
Toasted almonds or peanuts
  1. In a large bowl, combine couscous, dried fruit, cinnamon and salt.
  2. Bring broth and oil to a boil in a medium sauce pan. Pour over couscous mixture. Cover; let stand 5 minutes until liquid is absorbed. Fluff with a fork and cool to room temperature, about 30 to 40 minutes.
  3. Stir in chicken, orange juice, onions and celery. Serve on lettuce leaf; garnish with nuts.
