A terrific salad chock-full of fresh garden vegetables tossed with an easy zesty balsamic dressing.

Garden Delight

2 carrots, shredded
2 celery stalks, diced
2 bell peppers, diced
1 cucumber, diced
2 tomatoes, diced
1/2 small red onion, chopped
3/4 cup shredded colby or Monterey Jack cheese
1 (.6-ounce) package zesty Italian salad dressing mix (e.g. Good Seasons™)
1/8 cup balsamic vinegar
1/8 cup white wine vinegar

  1. In a large bowl, combine the carrots, celery, bell peppers, cucumbers, tomatoes, onion and cheese.
  2. Prepare the dressing according to the directions, however substitute 1/8 cup balsamic vinegar for half of the white wine vinegar the directions ask for.
