Garden Pasta Salad

Recipe Ingredients:

1 pound penne pasta
1/2 teaspoon salt
1/4 cup finely chopped onion
3 to 4 radishes, chopped
1 cup celery, chopped
1 cup carrots, chopped

Dressing:
1/2 cup canola mayonnaise
1/2 cup sour cream
1/2 teaspoon ground black pepper
1 teaspoon prepared or dry mustard
1 teaspoon lemon juice
1 teaspoon granulated sugar
3 tablespoons milk

Cooking Directions:

  1. In a large saucepan, combine penne pasta in lightly salted water, bring to a boil and cook until tender but not firm. Drain. Rinse under cold water. Drain well. Put pasta into a large serving bowl and allow to cool.
  2. Add onion, radish, celery and carrots to pasta. Toss.
  3. In small bowl mix together mayonnaise, sour cream, pepper, mustard, granulated sugar, lemon juice and milk. Add dressing to pasta; toss well.

Makes 10 servings.
