Serve this old-fashioned German potato, Muenster cheese and ham salad with dark rye or pumpernickel bread and butter.

German Country Salad with Muenster Cheese

Mustard Dressing:
1/3 cup vegetable oil
3 tablespoons cider vinegar
1 tablespoon grainy mustard
1 teaspoon prepared horseradish
1/2 teaspoon granulated sugar
Salt
 
Salad:
4 Boston lettuce cups
4 small red potatoes (about 1 pound), cooked, cooled and sliced
8 ounces Wisconsin Muenster cheese
4 ounces ham or salami
1 small red onion, sliced and separated into rings
2 tablespoons chopped parsley
  1. For Mustard Dressing: Whisk together first 5 ingredients. Stir in salt, to taste.
  2. For Salad: Arrange lettuce cups and potatoes on serving plate. Cut cheese and ham into julienne; arrange on plate with onion rings. Drizzle with dressing. Sprinkle with parsley.
  3. Serve with dark rye or pumpernickel bread and butter.

Makes 4 servings.
