Gourmet Caesar Chicken Salad.

This Caesar chicken salad is given the gourmet touch with the simple substitution of lemon juice for vinegar when mixing the quick and easy convenient dry salad mix.

Gourmet Caesar Chicken Salad

1 envelope dry Caesar salad dressing mix
1/4 cup lemon juice
1 pound boneless, skinless chicken breast halves, cut into strips
6 cup romaine lettuce, washed, dried and torn
1 cup seasoned croutons
1/3 cup freshly grated Parmesan cheese
Lemon wedges
  1. Prepare salad dressing as directed on envelope, except substituting the lemon juice for vinegar.
  2. Cook chicken in 1 tablespoon of the prepared dressing in skillet on medium heat until cooked through.
  3. Place lettuce, chicken, croutons and cheese in large salad bowl. Add remaining dressing; toss to coat well.
  4. Serve with lemon wedges, if desired.

Makes 6 servings.

Nutrition Information Per Serving: 380 calories, 27g fat, 60mg cholesterol, 687mg sodium, 10g carbohydrate, 1g dietary fiber, 24g protein.
