Granny Smith Confetti Coleslaw
Chopped Granny Smith apples add a sweet-tart note to this terrific coleslaw.
Confetti Slaw Dressing:
1/4 cup yogurt
2 tablespoons sweet pickle juice
2 teaspoons Dijon mustard
1/2 teaspoon honey
1/4 teaspoon black pepper
1/8 teaspoon celery seed
4 cups chopped Granny Smith apples
2 tablespoons lemon juice
2 cups chopped cabbage
1 red pepper, chopped
2 green onions finely chopped
2 tablespoons chopped sweet pickles (optional)
- For Confetti Slaw Dressing: Combine all ingredients together, mixing well. Makes about 1/3 cup.
- For Coleslaw: Toss apples with lemon juice. Combine remaining ingredients in large bowl; toss to coat with Confetti Slaw Dressing.
