Greek-style chicken salad with shredded
carrots, chopped cucumber, kalamata olives and feta cheese tossed
with an Italian dressing.
Greek Chicken Salad
- 2 cups cooked, cubed chicken meat
- 1/2 cup shredded carrots
- 1/2 cup chopped cucumber
- 1/4 cup sliced kalamata or black olives
- 1/4 cup crumbled feta cheese
- 1/4 cup Italian style salad dressing
- Fresh greens, torn
- In a large bowl combine the chicken, carrots,
cucumber, olives and cheese.
- Add the salad
dressing and mix well.
- Cover and refrigerate. Allow flavors to
marinate for at least 1 hour.
- Serve on a bed of fresh greens.
Makes 2 to 4 servings.
