Italian Spinach & Mushroom Salad.

A fresh spinach salad chock-full of flavor and yummy things to eat, like tender, sliced baby bella mushrooms, crunchy garbanzo beans, crisp-cooked bacon and whipped cream cheese, tossed with your favorite Italian dressing.

Italian Spinach & Mushroom Salad

1 (10-ounce) package fresh spinach leaves, rinsed and patted dry
1 (8-ounce) package sliced baby bella or button mushrooms
1/4 cup whipped cream cheese, added to salad by small spoonfuls
1 (19-ounce) can chick peas or garbanzos, thoroughly rinsed and drained
1/3 cup crumbled crispy cooked bacon
Seasoned croutons
1/2 cup your favorite Italian dressing
  1. In large salad bowl, combine all ingredients except dressing. Drizzle with Italian dressing; toss gently. Serve, if desired, with additional dressing.

Makes 4 servings.

Tip: Make it a main dish salad . . . just flash marinate! Brush meat or poultry repeatedly during grilling or broiling with Italian dressing; then slice and add to salad.
