A simple layered vegetable
salad served with a tasty yogurt blue cheese dressing.

Vegetable Salad with Yogurt Blue Cheese Dressing
- 1 small head lettuce,
torn into pieces
2 small Bermuda onions, thinly sliced and separated into rings
2 cups thinly sliced zucchini
2 cups halved cherry tomatoes

- Yogurt Blue Cheese
Dressing:
1 cup (4 ounces) Wisconsin Blue cheese
1 1/2 cups plain yogurt
1 cup mayonnaise
1/4 cup vinegar
2 tablespoons granulated sugar
1 clove garlic, minced
- In a clear salad bowl,
layer the lettuce, onion, zucchini and tomato halves. Serve with
Yogurt Blue Cheese Dressing.
- For Dressing: Combine
all ingredients in medium bowl. Mix until thoroughly blended
and chill.
Makes 8 servings.
