Les Freres with Carrot and Apple Salad.

A tangy salad of julienned carrots and Braeburn apples with caraway seed served with a slice of Les Frères, a rich cheese with an earthy, fruity flavor that pairs wonderfully with this salad. Recipe by Chef Scott Johnson.

Les Frères with Carrot and Apple Salad

8 ounces (3 to 4) carrots, peeled, cut into julienne strips
2 Braeburn apples, peeled and cut into julienne strips
2 ounces (scant 1/4 cup) extra virgin olive oil
1/2 ounce (2 tablespoons) cider vinegar
1/2 teaspoon caraway seeds
Salt and pepper to taste
6 ounces Wisconsin Crave Brothers Les Frères cheese, cut into 4 slices
  1. Preheat oven to 350°F (175°C).
  2. In large bowl, combine all ingredients except salt, pepper and cheese. Season to taste and arrange on 4 serving plates.
  3. Warm the cheese in the oven for about 2 minutes, just until the cheese begins to melt. Remove cheese and place a slice on top of the carrot and apple salads.

Makes 4 servings.
