Low-Fat
Thousand Island Dressing
- 1/3 cup low-fat mayonnaise
- 2 tablespoons ketchup
- 2 tablespoons fresh lemon
juice
- 2 tablespoons minced bell
pepper
- 1 tablespoon minced onion
- 1 tablespoon minced fresh
parsley leaves
- 1 tablespoon sweet pickle
relish
- Pinch of cayenne
- 1/4 cup water
- Salt and freshly ground
black pepper to taste
- In a blender puree all
ingredients until smooth, adding up additional water if necessary to thin to desired consistency.
- Cover and refrigerate.
Keeps for 1 week.
Makes about 1 cup.
