Crunchy corn chips add a surprising bite
to this fun and festive salad. For relaxed entertaining marinate
the beans ahead of time and toss the salad at your convenience.
Marinated
Green Chile and Bean Salad
- 1 (15.5-ounce) can pinto
beans, drained
1 (15.5-ounce) can black beans, drained
1 (8-ounce) bottle Catalina style dressing
1 cup red onion, chopped
1 (4-ounce) can diced green chiles
1 clove garlic, finely chopped
1 bag prepared salad
1 1/2 cups chopped fresh tomato
3/4 cup shredded cheddar cheese
1 small bag corn chips, slightly broken up
- Combine pinto beans, black
beans, dressing, onion, chile and garlic in medium bowl. Refrigerate
for at least 30 minutes or overnight.
- Toss bean mixture, salad,
tomatoes, cheese and corn chips in large bowl. Serve immediately.
