Mediterranean Tuna Salad

3 (6 1/2-ounce) cans water packed tuna, drained and flaked
1/2 pound low-fat dill Havarti cheese, cut into 1/2-inch cubes
1/2 cup pitted black olives, thinly sliced
2 (8-ounce) packages fusilli, cooked according to package directions
1 cup thinly sliced scallions, including green tops
1/2 cup finely chopped red pepper
1/2 cup thinly sliced green pepper
Zest from 1 lemon
1 (8-ounce) bottle Italian salad dressing
8 Lettuce leaves, washed and patted dry
Black pitted olives, for garnish
  1. Combine all ingredients in a large bowl. Toss to combine. Let stand for 15 minutes. Serve on a lettuce leaf. Garnish with olives, if desired.

Makes 8 servings.
