Mixed Baby
Greens with Easy Balsamic Vinaigrette
- 1/3 cup balsamic vinegar
- 2 teaspoons packed dark
brown sugar
- 2/3 cup extra virgin olive
oil
- Salt and freshly ground
black pepper to taste
- 1 (12-ounce) package mixed
baby greens
- Freshly shaved Parmesan
cheese for garnish*
- Whisk the balsamic vinegar
and brown sugar together a small bowl (placed atop a damp towel
to stabilize) until sugar has dissolved. Slowly pour in the olive
oil in a small stream while whisking constantly until all has
been incorporated and the vinaigrette is emulsified. Season to
taste with salt and pepper.
- Toss baby greens with
just enough dressing to lightly coat leaves.
- To served sprinkle with
Parmesan shavings and offer additional vinaigrette according
to personal preference.
- Refrigerate unused vinaigrette.
Makes 4 servings.
*Use a vegetable peeler.
