Mom's Old-Fashioned Potato Salad

Recipe Ingredients:

2 pound red potatoes, cooked, peeled and cubed (about 6 cup)
4 to 6 hard-boiled eggs, chopped
1 1/4 to 1 1/2 cups reduced fat mayonnaise
1/2 cup sweet or dill pickle relish
1 tablespoon prepared mustard
1 to 2 tablespoon dried minced onion
1/4 teaspoon salt
1/4 teaspoon ground black pepper

Cooking Directions:

  1. Place potatoes and eggs in a large bowl.
  2. In a separate small bowl combine mayonnaise, pickle relish, mustard, onion, salt and pepper; mix to combine.
  3. Add mayonnaise mixture to potatoes and eggs and stir to mix. Garnish with reserved hard-boiled egg slices or pickle slices.

Makes 8 servings.
