A layered pineapple and mandarin orange
gelatin salad with double the orange flavor, topped with a fluffy
mixture of cream cheese and vanilla pudding.
Orange Fluff Gelatin
Salad
- 1 (6-ounce) orange gelatin
- 2 1/2 cups boiling water
- 2 (11-ounce) cans mandarin oranges, drained
- 1 (8-ounce) can crushed pineapple, undrained
- 1 (6-ounce) can frozen orange juice concentrated,
thawed

- Topping:
- 1 (8-ounce) package cream cheese, softened
- 1 cup cold milk
- 1 (3.4-ounce) package instant vanilla
pudding mix
- In a bowl, dissolve gelatin in boiling
water. Stir in oranges, pineapple and orange juice concentrate.
- Grease or spray with nonstick cooking
spray a 13 x 9 x 2-inch dish. Pour gelatin mixture into prepared
dish. Refrigerate until firm.
- In a mixing bowl, beat cream cheese until
light. Gradually add milk and pudding mix; beat until smooth.
Spread over orange layer. Chill until firm.
Makes 12 to 16 servings.
