Fresh, juicy peaches add a sweet note to this elegant chicken salad.

Peachy Chicken Salad

3 fresh peaches, peeled and chopped
2 cups chopped cooked chicken breast
1/2 cup chopped celery
1/2 cup chopped radishes
1/4 cup chopped green onions
1/4 cup chopped green bell pepper
1/4 cup vegetable oil
3 tablespoons seasoned rice vinegar
1 teaspoon soy sauce
1/2 teaspoon ground ginger
Mixed salad greens
1/2 cup toasted slivered almonds
Fresh peach slices for garnish (optional)
  1. Combine first 6 ingredients in a large bowl; toss gently and set aside.
  2. Combine oil, vinegar, soy sauce, and ginger in a small bowl with a whisk until well blended. Pour dressing over chicken mixture; stirring gently.
  3. Divide desired amount of mixed salad greens onto 4 dinner plates and spoon chicken mixture atop the bed of greens; sprinkle with toasted almonds and garnish if desired.

Makes 4 servings.
