Peachy Chicken Salad
- 3 fresh peaches, peeled and chopped
- 2 cups chopped cooked chicken breast
- 1/2 cup chopped celery
- 1/2 cup chopped radishes
- 1/4 cup chopped green onions
- 1/4 cup chopped green bell pepper
- 1/4 cup vegetable oil
- 3 tablespoons seasoned rice vinegar
- 1 teaspoon soy sauce
- 1/2 teaspoon ground ginger
- Mixed salad greens
- 1/2 cup toasted slivered almonds
- Fresh peach slices for garnish (optional)
- Combine first 6 ingredients in a large bowl; toss gently and set aside.
- Combine oil, vinegar, soy sauce, and ginger in a small bowl with a whisk until well blended. Pour dressing over chicken mixture; stirring gently.
- Divide desired amount of mixed salad greens onto 4 dinner plates and spoon chicken mixture atop the bed of greens; sprinkle with toasted almonds and garnish if desired.
Makes 4 servings.
