The simple addition of
grated pepato cheese, similar to Romano or Asiago, but studded
with whole black peppercorns, is an easy way to turn an ordinary
tossed green salad into a very special one.
Pepper-Cheese
Salad Supreme
- 12 cups mixed salad greens
3/4 cup coarsely grated carrot
1 pint cherry tomatoes, washed and stemmed
2/3 cup prepared vinaigrette or Italian dressing
2 cups (6 ounces) grated Wisconsin Pepato cheese
- In a large salad bowl,
toss the greens, carrot, tomatoes and dressing until combined.
Top with cheese. Serve.
Makes 6 to 8 servings.
Note: Wisconsin Asiago
or Romano cheese and coarsely ground black peppercorns may be
substituted for the Pepato cheese.
