A simple, emulsified sweet-tart salad dressing with poppy seeds. Wonderful on both lettuce and fruit salads.

Poppy Seed Dressing

1 1/2 cups granulated sugar
3 teaspoons powdered mustard
2 teaspoons salt
2/3 cup cider vinegar
2 cups vegetable oil
3 tablespoons poppy seeds
  1. In a food processor or blender pulverize the sugar. Add the mustard, salt and vinegar to the sugar and mix.
  2. With the machine running slowly in a small stream add the oil to the sugar mixture.
  3. Remove mixture from the machine and stir in the poppy seeds. Store in covered glass or plastic container and keep refrigerated.

Makes 1 quart dressing.
