Red and White Christmas Cinnamon Salad
A festive, apple and cinnamon-flavored layered gelatin salad with a ribbon of cream cheese mixed with sour cream, chopped pecans and diced celery running through the middle.
1 3/4 cups apple juice
2/3 cup red cinnamon candies
1 (6-ounce) package lemon flavored gelatin
1 (24-ounce) jar applesauce
1 (8-ounce) package cream cheese, softened
1/2 cup sour cream
1/2 cup chopped pecans
1/2 cup diced celery
1 teaspoon lemon juice
- Bring apple juice to boil in medium saucepan. Add candies and gelatin; stir until dissolved. Add applesauce; mix well. Pour half of gelatin into 9-inch pan or 2 quart clear glass bowl. Chill until firm. Allow remaining half of gelatin to stand at room temperature.
- Combine cream cheese, sour cream, lemon juice, pecans and celery; mix well. Spread evenly over gelatin in pan.
- Pour remaining gelatin mixture over cream cheese layer; chill until firm.
- Cut into squares. Serve on lettuce-lined salad plates, garnished with additional red cinnamon candies and celery leaves.
