A Medeterranean tossed
salad with crisp romaine lettuce, red onion, tomato, kalamata
olives and feta cheese tossed in a Dijon mustard and red wine
vinaigrette.
Romaine
Salad with Feta Cheese
- 1 head romaine lettuce,
washed and torn
- 1/4 cup finely chopped
red onion
- 1 large ripe tomato, chopped
- 1/4 cup kalamata olives
(or black olives)
- 1 cup crumbled feta cheese
- 1 tablespoon Dijon mustard
- 1/4 cup red wine vinegar
- 1/4 cup olive or canola
oil (or a mixture of the 2)
- Coarse salt and freshly
ground pepper to taste
- In a large bowl combine
lettuce, onion, tomato, olives and feta cheese. Chill until ready to serve.
- In a small bowl, mix the
mustard, vinegar, oil, salt and pepper with a whisk. Just before serving, drizzle over
salad and toss to combine.
