Romaine Salad with Feta Cheese
A Mediterranean side salad with crisp romaine lettuce, red onion, tomato, kalamata olives and feta cheese tossed in a Dijon mustard and red wine vinaigrette.
1 head romaine lettuce, washed and torn
1/4 cup finely chopped red onion
1 large ripe tomato, chopped
1/4 cup kalamata olives or black olives
1 cup crumbled feta cheese
1 tablespoon Dijon mustard
1/4 cup red wine vinegar
1/4 cup olive or canola oil
Coarse salt and freshly ground pepper to taste
- In a large bowl combine lettuce, onion, tomato, olives and feta cheese. Chill until ready to serve.
- In a small bowl, mix the mustard, vinegar, oil, salt and pepper with a whisk. Just before serving, drizzle over salad and toss to combine.
Makes 4 servings.
