Sesame Pork Salad

1/4 pound snow pea pods, trimmed
3 cups cooked long-grain rice
1 1/2 cups slivered cooked pork (or chicken)
1 medium cucumber, peeled, seeded, and cut into very thin strips
1 red bell pepper, cut into very thin strips
1/2 cup sliced green onions
2 tablespoons toasted sesame seeds
1/4 cup chicken broth
3 tablespoons seasoned rice vinegar
3 tablespoons soy sauce
1 teaspoon sesame oil
  1. Cook snow peas in boiling water to cover for 1 minutes or until crisp-tender; drain. Plunge in ice water and drain. Cut snow peas into very thin strips.
  2. Combine snow peas and remaining ingredients in a large bowl; gently toss to mix and serve.

Makes 2 to 3 main-course servings.
