Marinated cucumbers are given a flavorful Asian spin.
1 large cucumber, peeled
1/2 yellow onion
3 tablespoons vegetable oil
1 teaspoon sesame oil
1 teaspoon granulated sugar
4 tablespoons seasoned rice vinegar
Pinch crushed red pepper flakes
Fresh cilantro, chopped (optional)
- Slice cucumber in half lengthwise and remove seeds. Thinly slice and place in shallow serving bowl.
- Thinly slice onion and toss with cucumber.
- In small bowl, stir together vegetable oil, sesame oil, sugar, seasoned rice vinegar and pinch of crushed red pepper.
- Drizzle dressing over cucumbers and onions. Garnish with chopped fresh cilantro.
