A quick trip to your pantry will provide the means to a delicious, fiesta-style dish without the calories associated with typical south-of-the-border fare!

Southwest Tuna Salad

1 (5-ounce) pouch StarKist Creations™ Sweet & Spicy Tuna
1 (15-ounce) can black beans
8 ounces low fat ranch dressing
6 ounces (1 1/2 cups) cheddar cheese, shredded
10 ounces lettuce, washed and torn
1 (10-ounce) package frozen whole kernel corn, thawed
1 (16-ounce) jar salsa
  1. Rinse and drain beans.
  2. In a large bowl, layer half of the lettuce, tuna, beans, corn, and ranch dressing. Repeat first five layers; top with salsa; sprinkle with cheese.
  3. Cover and chill for 1/2 hour before serving.

Makes 6 servings.
