This noodle salad goes well with Thai-Style Chops.

Spicy Peanut Noodle Salad

10 ounces penne, ziti or other short tubular pasta
1 small cucumber, halved, seeded and thinly sliced
2 carrots, peeled and grated
4 green onions, chopped (all of the white part and some of the green)
1/2 cup peanut sauce
1 tablespoon ginger flavored soy sauce
2 tablespoons rice vinegar
1 tablespoon granulated sugar
Chopped fresh cilantro
Chopped roasted peanuts
  1. Cook noodles according to package directions, drain and place in large bowl; let cool slightly.
  2. Meanwhile, in small bowl, stir together peanut sauce, soy sauce, vinegar and sugar, stirring to dissolve sugar. Add cucumber, carrots and green onions to pasta; toss dressing with noodle mixture.
  3. Serve, or chill up to 4 hours. Stir again before serving. Garnish with cilantro and peanuts.
