Fresh spinach salad with
sliced apple and red onion, tossed in a honey-mustard dressing.
Spinach
Salad with Apple and Onion
- 1/4 cup extra virgin olive
oil
2 tablespoons apple cider vinegar
2 tablespoons honey
- 1 teaspoon stone ground
mustard
- 1 medium Golden Delicious
apple, quartered, cored, and sliced or chopped
1/2 small red onion, thinly sliced, soaked in cold water for
10 minutes and drained thoroughly
- 1 (10-ounce) package triple-washed
spinach, de-stemmed if needed
- Salt and freshly ground
black pepper
- Whisk together the oil,
vinegar, honey, and mustard in the bottom of a large salad bowl.
Add the prepared apple
and onion to the dressing and toss to coat well.
- When ready to serve salad,
add the spinach, tossing gently just until leaves are glistening
with dressing. Season to taste with salt and pepper.
Makes 4 servings.
