Sliced turkey breast, strawberries, grapes, celery and red onion are arranged atop a bed of butter lettuce and drizzled with a creamy, fat-free mango chutney dressing.

Strawberry Spa Turkey Salad

6 tablespoons chopped prepared mango chutney
1/4 cup nonfat plain yogurt
1/4 cup nonfat mayonnaise dressing
2 tablespoons lime juice
Salt and pepper, to taste
Butter lettuce leaves
8 ounces sliced, cooked, skinless turkey breast
2 pint baskets California strawberries, stemmed and halved
1 cup red or green seedless grapes
3/4 cup sliced celery
1/2 cup chopped red onion
Mint sprigs, for garnish
  1. In small bowl whisk chutney, yogurt, mayonnaise and lime juice; season with salt and pepper.
  2. Line platter or 4 individual serving plates with lettuce; top with turkey, strawberries, grapes, celery and onion. Drizzle with chutney dressing; garnish with mint sprigs.

Makes 4 servings.

Nutritional Information: 261 calories; 21 g protein; 4 g fat; 40 g carbohydrate; 5 g fiber; 44 mg cholesterol; 282 mg sodium.
