Sweet Caroline's Fall Festival Salad.

A festive salad mixture of fall fruits, apple, pear and orange with fresh soybeans (also known as edamame), dried cranberries and walnuts tossed with a sweet orange and poppy seed dressing.

Sweet Caroline's Fall Festival Salad

1 (7-ounce) package iceberg or romaine lettuce mix
1 Macintosh apple
1 Bartlett pear
2 naval oranges, peeled
1/4 pound smoked gouda cheese
1/4 cup fresh soybeans (or lima beans), cooked
1/2 cup dried cranberries
1/2 cup walnut pieces
3/4 cup Caroline’s Sweet Orange Poppy Seed Dressing
  1. Cut the apple, pear, oranges and Gouda into bite size pieces, add soybeans, dried cranberries and walnuts. Toss the ingredients with 1/2 cup of the Sweet Orange Poppy Seed Dressing.
  2. Toss the lettuce mix with the remaining dressing and place in a large salad bowl.
  3. Place fruits, walnuts and cheese mixture on top of the lettuce and serve.
  4. To create an entrée salad, add 2 cups diced chicken or turkey.
