Crushed pineapple adds a sweet twist of
flavor to this tasty green pea and cheddar cheese salad.
Sweet Pea Salad
- 2 cups loose-pack frozen peas
- 1/3 cup mayonnaise
- 1/4 cup crushed pineapple, drained well
- 1/2 cup sharp cheddar cheese, diced
- 1/4 cup chopped celery
- 2 tablespoons sliced green onions
- Dill weed, to taste
- Salt and pepper to taste
- Place frozen peas in a colander/strainer
and thaw under cold running water; drained thoroughly and set
aside.
- Combine mayonnaise, pineapple, cheese,
celery, green onions, salt, pepper and dill. Gently stir in peas.
Refrigerate until ready to serve.
Makes 6 servings.
