Tasty, sweet and a bit nutty! Raw shredded
sweet potato is tossed with diced apples, lemon juice, thinly
sliced celery, golden raisins and slivered toasted almonds in
reduced-fat mayonnaise.
Sweets 'n Nuts Slaw
- 2 cups shredded raw sweet potatoes
- 1 cup diced apples
- 1 tablespoon lemon juice
- 1/2 cup thinly sliced celery
- 1/2 cups golden raisins
- 1/3 cup toasted slivered almonds or sunflower
seeds
- 2 tablespoons chopped parsley
- 1/3 cup reduced-fat mayonnaise
- In bowl, toss sweet potatoes with ice
water. Let stand several minutes; drain.
- In serving bowl, toss apples with lemon
juice. Add sweet potatoes and remaining ingredients; blend well.
Chill until ready to serve.
