A flavorful Mediterranean-style
cheese tortellini salad with pine nuts and crumbled feta cheese.
Tortellini
Salad
- 1 (16-ounce) bag frozen
cheese tortellini, cooked according to package
- 1/4 cup olive oil
- 2 teaspoons minced lemon
zest
- 1/4 cup lemon juice
- 2 tablespoons pine nuts
- 1 tablespoon honey
- 1 green bell pepper, seeded
and sliced into strips
- 1 red bell pepper, seeded
and sliced into strips
- 1 small red onion, sliced
into thin strips
- 1/2 cup sliced black olives
- 1/2 cup crumbled feta
cheese
- Salt and freshly ground
black pepper to taste
- In a small bowl, whisk
together olive oil, lemon zest, lemon juice, pine nuts, and honey.
- Combine cooked pasta,
peppers, red onion, and olives in a large bowl. Toss with dressing and feta cheese.
