
Tomato Orange
Salad
- 2 cups fresh pineapple,
cubed
1 fresh avocado, cubed
1 fresh mango, cubed
1/2 cup coriander (cilantro) leaves, chopped
1 cup dried banana chips, cracked
1/2 cup Renée's Gourmet Raspberry Vinaigrette or Poppy
Seed Dressing
2 tablespoons toasted pecans
1 tablespoon toasted sesame seeds
2 tablespoons pink marinated ginger slices
Juice of 1/2 fresh lime
- Cut up pineapple, avocado
and mango; add banana chips, coriander, raspberry vinaigrette
or poppy seed dressings and nuts. Mix gently, adding fresh lime
juice.
- Serve on platter adding
ginger slices and toasted sesame seeds as garnish.
Makes 4 to 6 servings.
