Serve Italian bread or hard rolls with this main dish salad.

Turkey & Artichoke Country Salad

Dressing Ingredients:
2 (6-ounce) jars marinated artichoke hearts, drained, reserve marinade
2 tablespoons balsamic vinegar
1/4 teaspoon coarsely ground pepper

Salad Ingredients:
1 (10-ounce)package (6 cups) mixed salad greens
1 (8-ounce) package (3 cups) fresh mushrooms, halved
8 ounces unsliced deli turkey, cubed 1/2-inch
4 ounces (1 cup) mozzarella cheese, cubed 1/2-inch
2 medium tomatoes, cut into wedges
2 tablespoons freshly grated Parmesan cheese
  1. Stir together reserved marinade, vinegar and pepper in small bowl.
  2. Toss together all salad ingredients and dressing mixture in large bowl.

Makes 10 servings.
