This bright and colorful salad is a fantastic way to use up leftover turkey. Good with store-bought roasted turkey as well

Turkey Orange Salad

1 cup rice vinegar
2 cloves garlic, crushed
2 tablespoons frozen orange juice concentrate
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 head lettuce, shredded
2 cups diced cooked turkey
3 small oranges, supremed*
1 red onion, peeled and thinly sliced
  1. In a bowl combine rice vinegar, garlic, orange juice concentrate, olive oil, salt and pepper. Stir until thoroughly combined.
  2. In a large bowl combine lettuce, turkey, oranges and red onion. Toss with the dressing and serve immediately.

Makes 6 servings.

*Supreming Citrus: Using a paring knife, remove the skin, pith, and outer membrane from the citrus fruit. Carefully cut each segment away from white membranes.
