A delightful first course or side salad
of toasted walnuts and tangy slices of creamy goat cheese arranged
on a bed of mixed salad greens and drizzled with an orange vinaigrette.
Walnut-Goat Cheese
Salad with Orange Vinaigrette
- Orange Vinaigrette:
- 1/4 cup orange juice
- 3 tablespoons white wine vinegar
- 1/4 teaspoon salt
- Freshly ground black pepper to taste
- 1/2 cup vegetable oil
- 1/4 cup extra virgin olive oil

- For Salad:
- 6 cups mixed salad greens
- 1/2 cup chopped walnuts, toasted
- 1 (6-ounce) package goat cheese, thinly
sliced
- For Orange Vinaigrette: Combine orange
juice and next 3 ingredients in container of an electric blender.
With motor running, gradually add oils in
a slow steady stream, processing until blended.
Makes 1 cup.
- For Salad: Arrange lettuce, walnuts and
goat cheese decoratively on a serving plate.
- Serve with Orange Vinaigrette.
Makes 6 servings.
