Mandarin oranges add color and an occasional bite of sweetness to the classic wilted salad with slices of red onion and crisp bacon.

Wilted Salad with Mandarin Oranges

4 cups torn red leaf lettuce
8 cups torn fresh spinach leaves
1 small red onion, sliced into rings
3 bacon slices, diced
1/4 cup white vinegar
2 tablespoons water
1/2 teaspoon salt
1/4 teaspoon pepper freshly ground black pepper
1 (11-ounce) can mandarin oranges, drained
  1. Place lettuce and onion in a large salad bowl; set aside.
  2. In a skillet, cook bacon until crisp;do not drain. Stir in vinegar, water, salt and pepper. Pour over lettuce and toss gently until well coated.
  3. Add oranges, toss gently and serve immediately.

Makes 6 servings.
