Mandarin oranges add color
and an occasional bite of sweetness to the classic wilted salad
with slices of red onion and crisp bacon.
Wilted
Salad with Mandarin Oranges
- 4 cups torn red leaf lettuce
- 8 cups torn fresh spinach
leaves
- 1 small red onion, sliced
into rings
- 3 bacon slices, diced
- 1/4 cup white vinegar
- 2 tablespoons water
- 1/2 teaspoon salt
- 1/4 teaspoon pepper freshly
ground black pepper
- 1 (11-ounce) can mandarin
oranges, drained
- Place lettuce and onion
in a large salad bowl; set aside.
- In a skillet, cook bacon
until crisp;do not drain. Stir in vinegar, water, salt and pepper. Pour over lettuce
and toss gently until well coated.
- Add oranges, toss gently
and serve immediately.
Makes 6 servings.
