Creamy Chicken and Braeburn Apple Sandwiches.

A delicious creamy chicken salad sandwich filling with chunks of braeburn apple and chopped celery seasoned with fresh lemon juice and gingerroot.

Creamy Chicken and Braeburn Apple Sandwiches

1/2 cup mayonnaise
2 1/4 teaspoons lemon juice
1 teaspoon grated fresh gingerroot
1 cup cooked chicken, cut into 1/2-inch chunks
1 braeburn apple, cut into 1/2-inch chunks
1 celery rib, chopped
1 baguette
1 bunch watercress, basil or other herb
1 medium red onion, peeled and thinly sliced
  1. In medium bowl, mix mayonnaise, lemon juice and ginger until thoroughly blended. Stir in chicken, apple and celery. Season with salt.
  2. Cut baguette crosswise into 4 pieces, about 4 inches long. Cut each piece lengthwise, about 3/4 of the way through. Line each sandwich with watercress or basil; top with a heaping 1/2 cup of salad. Top with onion and season with black pepper.

Makes 4 servings.
