This simmered ground pork “loose meat” sandwich carries great flavor and a powerful kick from the ground chile. Look for ground chile in the Mexican section of your supermarket. Accompany with creamy cole slaw and potato chips.

Deviled Pork Buns

1 pound lean ground pork
1/2 cup beer
2 garlic cloves, crushed
1/2 medium onion, minced
1/2 teaspoon salt
2 teaspoons ground red chile (not chili powder)
1 teaspoon ground cumin
1/2 teaspoon ground coriander
6 soft sandwich buns
  1. In skillet cook and crumble pork; stir in beer, garlic, onion and salt; simmer for 20-30 minutes. Stir in red chile, cumin and coriander; mix well and simmer for 5-10 minutes to allow flavors to blend. Serve on buns topped with yellow mustard and dill pickle chips.

Makes 6 servings.
